HER Around the Table
     Easy Watermelon Sorbet
Makes approximately 12 1/3 cup servings
Ingredients:
1/4 cup of lemon juice
1/2 cup of water
1 cup of granulated sugar
3-4 cups of cubed & seeded watermelon
Directions:
1. Combine lemon juice, sugar, and water in a saucepan over medium heat. Cook it down and stir until sugar is thoroughly dissolved. It takes about 5 minutes.
2. Remove the saucepan from heat and refrigerate until cooled for about 30 minutes.
3. Puree watermelon in a blender or food processor.
4. Stir pureed watermelon into sugar mixture.
5. Transfer watermelon mixture to an ice cream maker and freeze ac-
cording to the manufacturer’s instructions or freeze in the freezer, stirring every 10-15 minutes. It will not be as light and fluffy, freezing in the freezer, but it works!

    Health Care Worker Appreciation
Medical professionals are working on the front lines of the COVID-19 pandemic. To show their appreciation and support of the CNAs, LPNs, RNs, doctors, and everyone working at CHI St. Vincent Hot Springs, local first re- sponders and tow truck companies were on hand to “light up” the hospital’s
parking lot on May 14. The event, which originated with Daryl Conrad, owner of Legacy Towing and Recovery, included Garland County sheriff’s deputies, Arkansas State Police, Hot Springs police, LifeNet, Hot Springs Village Fire De- partment, Arkansas Game and Fish, and numerous towing companies.
